Both protein and fat are sometimes broken down or hydrogenated to change their structure. The most common hydrolyzed ingredient is animal protein. Hydrolyzed protein molecules are broken down (shortened) to reduce their ability to cause an allergic response. The process has the disadvantage of reducing nutritional value and palatability. The risk of diarrhea may also be possible, especially if there is no transition time.
