Carbohydrates are basiclly sugar molecules. There are two categories; simple and complex. Simple carbohydrates are generally refined sugars that may stress the pancreas. Complex carbs have a more complex structure that takes longer to digest and are less stressful on the pancreas. Complex carbs like barley, oats, rye and legumes also contain viyamins, minerals, and fiber along with some protein and fat.
